The difference made in Guatemala One year later after our volunteers began a new school project at our Guatemala location. The school our corporate volunteers built has made excellent use of the support and financial aid supplied by our volunteers. Here is a picture of the school as it was before. The computer classroom is up and running and the kids in the school no longer have to pay another school for their computer classes. One of the Grade 8 students, who is interested in a career in the art field (as an art teacher) painted all the designs on the building. Work on the main classrooms of the school included building small walls around the verandah to protect against water entry during storms. Inside the computer center are the computers, computer desks and the projector donated by our volunteers. This classroom also has fans on the ceiling to help keep the room cooler. And this is where the guardian sets up his portable bed in the nights while he is protecting the property. Part of the donations covers part of the cost of the 24/7 guardian until the end of this year. Teacher Adelaida (Math and English) has been hired for 3 years with Vivint funding. She is now in the second year and is a huge asset to the school. Thanks to the bank of solar panels installed by one of the volunteer groups, the school no longer has to pay for electricity to run the computers or other electrical needs of the school. Also, energy is being fed into the local grid when the panels produce too much for the school. The kitchen on the right has been completely finished and the volunteer funding allows the purchase of appliances and cupboards to furnish it. The cafeteria has been closed in with half-walls. More work is needed to finish off this building completely. The bathrooms have been repaired and new doors to protect against vandalism. The entire fence around the property with entrance gate has been finished and allows the property to be protected during the nights. All the completed buildings have now been painted the same color.
What’s Cooking: Guatemalan Chicken with Pineapple (Pollo en Pina) We want to share with you a typical Guatemalan meal because we not only LOVE their food but we featured our Guatemala program in this month’s newsletter. This is a great meal for dinner with your family! Enjoy! Prep Time: 15 mins Total Time: 1 hr 15 mins Servings: 6 Ingredients 2 tablespoons olive oil or 2 tablespoons vegetable oil 3 -3 1/2 lbs broiler-fryer chickens, in pieces 1 medium onion, chopped 2 cloves garlic, minced 1 pineapple, cut in 1 inch cubes or 1 (20 ounce) cans unsweetened pineapple chunks, drained 1/2 cup dry sherry 2 tablespoons vinegar 1 teaspoon salt 1/4 teaspoon ground cinnamon 1/4 teaspoon ground cloves 1 dash pepper 2 medium tomatoes, coarsely chopped hot cooked rice ( can cook concurrently so all is ready at the same time) Directions Heat oil in large skillet; cook chicken on med heat until brown on all sides-- approximately 15 min. Remove chicken, cook onion& garlic in remaining oil until onion is tender, stirring frequently. Return chicken to skillet. Mix all remaining ingredients except tomatoes (and rice!); pour over chicken. Bring to a boil, reduce heat, cover, and simmer 20 min. Add tomatoes; simmer, uncovered, until thickest pieces of chicken are cooked through-- approximately 20 min. Serve with rice.
