Plan a holiday to change lives!

In a world of constant change and sometimes tumult, this holiday season we embrace and celebrate the good in humanity. Thanks to all of you wonderful volunteers for sharing your heart and time with us, learning from other cultures, helping others stand on their own two feet. We hope you can join us on an adventure in service in 2016. Have you ever considered the Philippines?

After much planning and training, we are excited to announce our new volunteer experience in the Philippines. Our program seeks to promote “Bayanihan”, a Filipino value of working together towards sustainable community development through volunteerism.

On this program volunteers will have the opportunity to work on a variety of projects; such as providing educational assistance to disabled people, repairing or constructing houses of the disabled, constructions of sanitation buildings, and working directly with reforestation efforts in the Nueva Ecija province. Women, children, and the disabled in particular, are marginalized and bear the brunt of poverty, which is why we focus our efforts towards them in the Philippines.

Volunteers will also have many opportunities to immerse themselves in the local culture and delicious cuisine of the region. From swimming in the pristine river of the Minlungao National Park to cultural sharing with local tribes, volunteers have the opportunity to surround themselves with all of the natural and cultural treasures the Philippines has to offer.

A short history of the Philippines

6The Philippines was named in honor of King Philip II of Spain. Spanish explorer Ruy López de Villalobos during his expedition in 1542 named the islands of Leyte and Samar Felipinas after the then Prince of Asturias. Eventually the name Las Islas Filipinas would be used to cover all the islands of the archipelago. Before that became commonplace, other names such as Islas del Poniente (Islands of the West) and Magellan's name for the islands San Lázaro were also used by the Spanish to refer to the islands.

The official name of the Philippines has changed several times in the course of the country's history. During the Philippine Revolution, the Malolos Congress proclaimed the establishment of the República Filipina or the Philippine Republic. From the period of the Spanish–American War (1898) and the Philippine–American War (1899–1902) until the Commonwealth period (1935–46), American colonial authorities referred to the country as the Philippine Islands, a translation of the Spanish name.[19] From the 1898 Treaty of Paris, the name Philippines began to appear and it has since become the country's common name. Since the end of World War II, the official name of the country has been the Republic of the Philippines.

Total time: 2 hours
Serves: 4

foodINGREDIENTS
  • 2 lbs beef eye of round or flank steak, 3/4 inch thick in one piece
  • 2 pieces beef cubes dissolved in 3 cups boiling water (beef stock/broth)
  • 1/4 tsp salt
  • 1 piece lemon
  • 1/2 cup soy sauce
  • 1 piece medium sized carrot, cut into long strips
  • 1/2 cup flour
  • 1/2 cup cooking oil
  • 4 pieces hotdogs, cut in half lengthwise
  • 2 pieces pickled dill or sweet pickled cucumber, cut lengthwise divided into 4 equal pieces
  • 3 pieces hard boiled eggs, sliced
  • 3 ounces cheddar cheese, cut in strips (about 1/2 inch thick)

INSTRUCTIONS
  1. Marinate the beef in soy sauce and lemon juice for at least 1 hour
  2. Place the beef in a flat surface and arrange the hotdogs, pickle, carrot, cheese, and egg on one side
  3. Roll the beef enclosing the fillings and tie with a cooking string to ensure that the meat will not open-up
  4. Place cooking oil in a pan and apply heat
  5. Dredge the rolled beef in flour and fry until the color of the outer part turns medium brown
  6. Transfer the fried rolled beef in a casserole and pour-in the beef broth then bring to a boil
  7. Pour-in half of the soy sauce-lemon juice marinade,salt and simmer until the beef is tender (about 2 hours using ordinary casserole or 30 minutes if a pressure cooker is used)
  8. Optional: Fry the simmered meat for at least 2 minutes
  9. Remove the strings and slice into serving pieces
  10. Place in a serving dish and add the sauce.
  11. Serve hot. Share and enjoy!
